3 to 4 lb. boneless pork loin 1 Tbsp. vegetable oil 1 tsp. salt 1 c. chicken broth or water 1 medium onion, sliced 3 cloves garlic, peeled 1/2 tsp. pepper Trim excess fat from pork. Heat oil in a large pan to medium-high. Cook pork in oil about 3 minutes per side until all sides are brown. Season with salt and pepper. Place onion and garlic in a slow cooker. Place pork on top of onion and garlic. Pour broth over pork. Cover and cook on low heat setting 8 to 10 hours or until pork is tender. *Note: Leftovers can be shredded and tossed with barbecue sauce for great barbecue sandwiches!
