1 1/2 c. low-fat buttermilk 1 Tbsp. Cajun seasoning, divided 1 chicken, cut in 8 pieces, skinned 2 Tbsp. fresh thyme leaves 4 c. cornflakes, crushed Combine buttermilk and 1 1/2 teaspoon seasoning. Soak chicken in buttermilk mixture for 1/2 hour. Heat oven to 425 degrees. Combine remaining ingredients. Coat chicken with cornflake mixture then cooking spray.
