2 cans black beans, drained about 80%
1 can diced tomatoes
season to taste with McCormick Sante Fe spice blend or any other
Mexican or Southwestern spice blends
sour cream, shredded cheese, diced green onions (topping)
Cook either in a crock-pot on low for about 3 to 4 hours or on stove
top. Serve over rice. Add toppings such as sour cream, shredded
cheese and diced green onions.
Variations: Add different types of tomato blends and/or spice
blends; serve over angel hair pasta like a "chili mac" and melt
