2 c. grated sweet potatoes
2 Tbsp. flour
1 can crushed pineapple (undrained)
1 c. sugar
1 c. milk
4 Tbsp. margarine
1 tsp. salt
Wash and peel sweet potatoes; grate. Cream the butter and flour,
mixed with the sugar and salt. Add eggs, slightly beaten, then milk,
pineapple and potatoes. Bake in 2-quart baking dish at 325 degrees for 1
hour and 15 minutes. Test. Good hot or cold. It freezes well.
