2 c. apple juice 2 c. chopped, pitted dates 2/3 c. soft margarine 3 c. self-rising flour 2 tsp. soda 2 eggs 1 tsp. vanilla extract 2 c. sugar 2 c. chopped nuts (pecans) Bring apple juice to a boil; pour over dates. Cream margarine and sugar together; add eggs. Alternate flour/soda and dates/apple juice into mixture and all is mixed well. Add vanilla and nuts. Pour into greased and floured loaf pans (four 2-pound pans or three 2-pound pans and 2 mini pans or two 2-pound pans and 4 mini pans). Bake in preheated oven at 275 degrees for 1 hour 45 minutes.
