2 c. sugar
1 c. sweet cream butter
3/4 tsp. almond extract
1 c. dry oatmeal
2 c. flour
1 Tbsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
2 1/4 c. unpeeled zucchini squash, liquefied in a blender
2 c. chopped walnuts
Preheat oven to 350 degrees. Prepare two loaf pans by greasing and then
Combine eggs and sugar. Melt butter, add with almond extract and add
to eggs and sugar, mixing very well. Add oatmeal and mix. Sift
together cinnamon, baking soda, salt and baking powder and add to
batter. Add zucchini and stir well. Add nuts. Pour into prepared
pans. Bake at 350 degrees for 1 hour.
