3 eggs 1 c. sugar 2/3 c. pumpkin (1 can) 3/4 c. flour 2 tsp. cinnamon 1/2 c. chopped pecans powdered sugar Filling: 1 c. powdered sugar 6 oz. cream cheese 4 Tbsp. butter Beat eggs at high speed. Gradually add sugar then add pumpkin. Add cinnamon and flour. Spray a 12 x 11 x 1-inch cookie sheet with Baker's Joy. Pour batter on cookie sheet evenly and sprinkle with chopped pecans. Bake at 375 degrees for 12 to 15 minutes. Remove from cookie sheet and place on towel sprinkled with powdered sugar. Sprinkle with powdered sugar and roll up in towel. Cool 30 minutes then unroll and spread on filling. Roll up and wrap with aluminum foil or plastic wrap. Refrigerate or freeze. Filling: Beat powdered sugar, cream cheese and butter until smooth.
