1/2 c. chopped onions 1 Tbsp. vegetable oil 2 c. cooked rice 1 medium fresh tomato, chopped, drained and divided 1 c. chopped cooked spinach 1/2 c. diced smoked turkey (this is optional; if making a meatless dish of course eliminate the turkey) 1/2 c. Swiss cheese, shredded 1/2 c. Mozzarella cheese, shredded 5 eggs, beaten or equivalent egg substitute 2/3 c. light cream (I used evaporated milk with a little water) 1/2 tsp. seasoned salt (I used salt) 1/4 tsp. nutmeg 1/8 tsp. ground red pepper 1/4 c. grated Parmesan cheese Cook onions in oil; stir in rice and all but 1/4 cup tomato. Salt and pepper to taste. Cook an additional 2 to 3 minutes. Cool. Press rice mixture into greased 8-inch baking dish. Spread spinach over rice; top with meat and cheeses. Combine eggs, cream, salt, nutmeg and red pepper in a small bowl. Pour over cheese layer. Garnish with 1/4 cup tomatoes and Parmesan cheese. Bake at 350 degrees for 30 to 35 minutes.
