2 bags of Boil-in-Bag rice 1 lb. ground beef or sausage (I used sausage) 1 (10 oz.) can mild diced tomatoes and green chilies 1 (15 oz.) can seasoned pinto beans (not rinsed; I could not find seasoned, so used regular) 8 oz. pasteurized prepared cheese product with mild jalapenos Prepare rice according to package directions and set aside. In a medium skillet, brown beef or sausage. Drain excess fat. Add beans, diced tomatoes and cheese. Simmer 10 minutes. Fold in rice and heat through. Garnish with tomatoes and cilantro, if desired. Yields 4. This can be used as a main dish. Serve with a salad and crusty bread. Glazed Chocolate Pound Cake would be a nice accompaniment.
