1/2 c. mayonnaise
1/4 c. grated Parmesan cheese
2 Tbsp. prepared mustard
4 boned and skinned chicken breasts
2/3 c. corn flakes, made into crumbs
Mix mayonnaise, cheese and mustard in a small bowl. Measure
out 1/3 cup and refrigerate. Brush both sides of chicken with the
remaining mixture. Coat well with crumbs. Arrange in a greased
shallow baking dish. Bake at 400 degrees for 20 minutes or until done.
Serve with remaining mayonnaise mixture for dipping. Yields 4
