1 whole chicken 1 can cream of chicken soup 1 c. sour cream 1/2 c. chicken broth 1/2 lb. butter or margarine, melted Ritz crackers, crushed poppy seeds (if desired) Cut up chicken and poach in boiling water to cover until done. Cool and remove chicken from bones. Cut into bite size pieces. Heat oven to 350 degrees. Grease a 9 x 12-inch baking pan. Mix soup, sour cream and broth. Put chicken in a layer in pan and pour mixture over evenly. Crush Ritz crackers to make 1 1/4 cups and sprinkle over chicken and soup mixture. Drizzle melted butter over crumbs. Sprinkle with poppy seeds, if desired. Bake 45 minutes. Serve hot with noodles or rice and a green veggie or salad.
