4 Tbsp. olive oil
4 boneless, skinless chicken breasts
salt, pepper, onion powder and garlic powder
1 medium onion, diced
1 (14.5 oz.) can Italian seasoned diced tomatoes
1/2 c. chicken broth
1 c. Mozzarella cheese
1/3 c. grated Parmesan cheese
1/3 c. grated Romano
Preheat oven to 375 degrees. Mix powders together and season
chicken, salt and pepper. Heat oil in ovensafe pan. When pan is
hot, add chicken and sauté 2 minutes on each side. Remove chicken.
Sauté the onions for 4 minutes. Add tomatoes and broth and
cook for 8 minutes to blend flavors. Return reserved chicken to
pan; stir to combine.
Mix cheeses together and sprinkle over chicken. Bake about 15
minutes. Serve with rice or pasta. Yields 4 servings.
