1 lb. fresh fish (your choice) 1/4 c. onion, finely chopped 1 garlic clove, minced 1 Tbsp. oil 1 Tbsp. parsley 1/2 tsp. salt 1/8 tsp. pepper 1/4 c. orange juice 1/2 Tbsp. lemon juice orange slices (for garnish, if desired) Arrange fish in a baking dish. Cook onion and garlic in oil until onion is tender but not browned. Stir in the parsley, salt and pepper. Spread mixture over fish. Combine orange and lemon juice and pour evenly over fish. Bake, covered, at 400 degrees for 20 to 25 minutes or until fish flakes easily with a fork. Garnish with orange slices. Yields 3 servings.
