2/3 c. celery, finely chopped 1/2 c. sweet relish, chopped 4 tsp. onion, finely chopped 1 c. mayonnaise 2 Tbsp. lemon juice 1 tsp. salt dash of pepper 2 (6 1/2 oz.) cans tuna, drained and flaked Combine celery, pickle and onion. Combine next 4 ingredients; fold into celery mixture along with the tuna. Cover and chill. Fill each tomato cup with the tuna mixture. Making Tomato Cups: Place tomatoes, stem down, on a cutting board. With a sharp knife, cut each tomato into 4 to 6 wedges, cutting into, but not through, the stem end of the tomato. Spread the wedges slightly apart and spoon in the salad mixture. Yields 8 servings.
