1 (1 lb.) pkg. smoked sausage or kielbasa, cut into 4-inch lengths 1 medium onion, cut into wedges 2 (14.4 oz.) cans sauerkraut, drained 2 medium apples, cut into wedges 4 to 6 medium potatoes, cut in half 1 c. apple juice salt and pepper Arrange sausage, onions, potatoes, apples and sauerkraut in large casserole. I put the sausage in the middle of casserole and add some of each veggie around the casserole. Add a can of sauerkraut, the rest of the veggies and top with sauerkraut. Pour the apple juice over all (you can use a little more than 1 cup) and the salt and pepper. Cover tightly and place in a 350 degrees oven for 3/4 to 1 hour. Remove cover and bake about 15 minutes more. Top will start to brown up. Yields 4 servings.
