4 boneless or bone-in chops (about 1 1/4-inches thick)
1 chipotle chili (canned in adobe) or 1 dried
chipotle, rehydrated and minced
2 tsp. oregano
2 crushed garlic cloves
2 Tbsp. vegetable oil
2/3 c. lime juice
1 Tbsp. chopped cilantro
1/2 tsp. salt
Place chops in a large self-sealing plastic bag. Combine
remaining ingredients in a small bowl and pour over chops. Seal
bag and marinate 4 to 24 hours. Remove chops from marinade
(discarding marinade) and grill 12 to 15 minutes or until done,
turning to brown evenly. Serve chops immediately. Yields 4
