large green tomatoes, sliced 1/4-inch thick 2 eggs, beaten 1 (5 oz.) can evaporated milk 1/3 c. water 1 1/2 c. all-purpose flour 1 tsp. salt 1/4 tsp. pepper Grease two 15 x 10 x 1-inch baking pans. Slice tomatoes 1/4 thick. In a shallow dish, mix eggs, milk, water, salt and pepper. Put flour in a shallow dish. Dip each slice into egg mixture, then flour. Dip each slice AGAIN into egg and flour mixture. Arrange tomatoes in pans so edges do not touch. Bake uncovered in 400 degrees oven for 20 minutes, turning after 10 minutes. Yields 28 slices.
