1 apple, cored and cut into chunks
1 pear, cored and cut into chunks
1 Tbsp. plus 1/2 tsp. fresh lemon juice
1 c. shredded carrot
1 c. sharp Cheddar cheese, diced
1/2 c. raisins
1/4 c. low-fat plain yogurt
3 Tbsp. mayonnaise
1 tsp. honey
1/8 tsp. dried mustard
dash of ground allspice
1/3 c. walnut pieces
In large bowl, toss apple and pear with 1 tablespoon lemon
juice. Add carrot, cheese and raisins and toss.
In a small bowl, stir together yogurt, mayonnaise, honey, 1/2
teaspoon lemon juice, dry mustard and allspice. Blend well. Add
to fruit mixture and toss to coat. Chill 1 hour. Add nuts before
serving. Serve on lettuce leaf. Yields 6.
