MARINATED CORN AND PEAS

1 can Shoe Peg corn, drained
1 can baby peas, drained
1 c. celery, chopped fine
1 bell pepper, chopped fine
1 bunch green onions, chopped
1/2 jar pimentos

Dressing:
1/2 c. white vinegar
1/2 c. olive oil
1 Tbsp. sugar
1 Tbsp. salt
1 Tbsp. pepper
1 Tbsp. water

Mix dressing ingredients together. Stir until sugar is
dissolved. Pour over veggies and refrigerate overnight. Yields 8
servings.
