3 c. fresh or 1 (12 oz.) pkg. frozen tortellini (cheese), cooked 1 medium zucchini, thinly sliced 1 large carrot, peeled and chopped 1/4 c. fresh parsley, chopped 1 pt. (2 c.) cherry tomatoes, halved 4 green onions, thinly sliced 1/2 c. fat-free Ranch dressing 2 Tbsp. fresh Parmesan cheese, grated Prepare tortellini according to directions. Drain and rinse. Prepare veggies and add to tortellini. Pour salad dressing on and stir. Sprinkle with Parmesan cheese. Cover and chill at least 30 minutes. Note: For main dish, add chicken. Yields 6 servings.
