Muffins: 1 1/2 c. flour 1/4 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/3 c. orange juice 1/4 c. margarine, melted 1 egg 1 (11 oz.) can mandarin orange segments, drained Topping: 1/3 c. flaked coconut 1/4 c. sugar 1 Tbsp. margarine, softened 1/2 tsp. grated orange peel Heat oven to 375 degrees. Combine flour, 1/4 cup sugar, baking powder, baking soda and salt. In a medium bowl, combine orange juice, melted butter and egg. Add to flour mixture and mix just until moistened. Gently stir in orange segments. Spoon into greased or paper lined muffin pans, filling 2/3 full. In a small bowl, stir together coconut, 1/4 cup sugar, margarine and orange peel. Sprinkle evenly on top of each muffin. Bake 18 to 23 minutes or until lightly browned. Let stand in pan 5 minutes; remove from pans. Yields 12 muffins.
