2 1/2 c. flour 2 c. sugar 1 Tbsp. pumpkin pie spice 1 tsp. baking soda 1/2 tsp. salt 2 eggs, slightly beaten 1/2 c. vegetable oil 1 c. solid packed pumpkin 2 c. apples, peeled and chopped Streusel Topping: 2 Tbsp. flour 1/4 c. sugar 1/2 tsp. cinnamon 4 Tbsp. butter Combine first 5 ingredients and set aside. Combine oil, egg and pumpkin. Add this to dry ingredients; stir until moistened. Stir in apples. Spoon batter into greased or paper lined muffin tins, 2/3 full. Sprinkle Streusel Topping over batter. Bake at 350 degrees for 35 to 40 minutes. For Topping: Mix dry ingredients. Cut in butter until mixture is crumbly. Yields approximately 1 dozen muffins.
