GRITS CASSEROLE

4 c. water
1 tsp. salt
1 c. quick cooking grits
4 eggs, lightly beaten
1 lb. pork sausage, browned and drained
1 1/2 c. shredded sharp Cheddar cheese, divided
1/2 c. milk
1/4 c. margarine, melted

In a saucepan, bring the water and salt to a boil. Slowly stir
in grits. Reduce heat and cook 4 to 5 minutes. Remove from heat
and add a small amount to the eggs. Add to the rest of the grits
in the pan. Add sausage and 1 cup cheese, milk and margarine.
Pour into a 9 x 13-inch greased pan. Sprinkle with remaining
cheese. Bake at 350 degrees for 50 to 55 minutes or until top begins to
brown. Yields 8 to 10 servings.
