1/2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. milk
1 c. grated carrots
1 c. grated zucchini
2 green onions, sliced
2 Tbsp. oil
Stir together the flour, baking powder and salt and pepper.
In another bowl, beat the eggs, milk, carrots, zucchini and
onions. Cook about 2 minutes on each side until golden brown. Add
the remaining oil to the pan as needed. Serve at once. Yields 8
