1/2 c. cornstarch 1 1/2 c. sugar 1/4 tsp. salt 1 1/3 c. water 3 egg yolks, beaten 1/4 c. Key lime juice 1 Tbsp. grated Key lime peel few drops (1) food coloring (if desired) Combine cornstarch, sugar and salt in saucepan. Gradually add water. Bring to a boil and cook 1 minute over medium heat, stirring constantly. Remove from heat and add 1/2 mixture to egg yolks; mix well. Return to hot mixture and boil 1 minute more. Remove from heat and stir in lime juice, peel and food coloring (if using). Pour into baked shell. Cover to edge with meringue and bake 12 to 15 minutes in 350 degrees oven.
