1 pie shell (your choice)
3 Tbsp. cornstarch
1 1/2 c. sugar
1/4 c. lemon or lime juice
1 Tbsp. rind
3 eggs, separated
1 1/2 c. boiling water
Mix together first 4 ingredients. Add three yolks to
cornstarch mixture and boiling water. Cook 4 minutes after it
boils. Top pie with meringue. Bake at 350 degrees for 10 to 15 minutes or
until meringue is nicely browned. Yields 6 to 8 pieces.
