Chocolate Crumb Crust (recipe follows) 2 c. (12 oz. pkg.) semi-sweet chocolate chips 3 (8 oz.) pkg. cream cheese, softened 1 (14 oz.) can sweetened condensed milk (NOT evaporated milk) 4 eggs 2 tsp. vanilla extract Heat oven to 300 degrees. In a heavy saucepan or microwave, melt chocolate chips. Stir until melted. In mixer, beat cream cheese until smooth. Gradually beat in sweetened condensed milk. Add melted chips and remaining ingredients; mix well. Pour into prepared crust. Bake 1 hour and 15 minutes or until center is set. Cool, chill and refrigerate any leftovers. Chocolate Crumb Crust: 1 1/2 c. vanilla wafer crumbs 1/2 c. powdered sugar 1/2 c. cocoa 1/3 c. melted butter or margarine Combine vanilla wafer crumbs, powdered sugar, cocoa and melted butter or margarine. Press firmly on bottom of spring-form pan. The cheese cake can be served with a decoration of whipped topping.
