GINGERBREAD

1/2 c. butter, melted
1/4 c. shortening, melted
3/4 c. firmly packed brown sugar
3/4 c. molasses
2 eggs, beaten
2 1/2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1 c. boiling water

Combine butter, shortening, brown sugar, molasses and eggs;
beat well at medium speed.

Combine flour and next 6 ingredients; stir well. Add flour
mixture to molasses mixture, stirring well. Stir in boiling water.
Pour batter into a greased 13 x 9 x 2-inch baking pan. Bake at
350 degrees for 30 to 40 minutes or until wooden pick inserted in center
comes out clean. Let cool in pan on a wire rack. Serve with your
favorite lemon sauce or 1/2 poached pear, sliced, and whipped
cream. Serves 16.
