1 box white or yellow cake mix
2 lb. Ricotta cheese
3/4 c. sugar
1 box instant vanilla or lemon pudding mix
1 c. milk
1 (8 oz.) container whipped topping
Preheat oven to 350 degrees. Prepare a 9 x 13-inch pan as directed
on package. Make cake as directed on package. Pour into pan.
In a large bowl, beat cheese, eggs and sugar. Pour on top of
cake batter. Bake 1 hour or until golden brown. Allow cake to cool
In bowl, beat pudding mix with milk until thick. Fold in
topping until blended. Spread on cake. Cut into squares to serve.
Yields 16 to 20 pieces.
