4 8 oz. pkgs. cream cheese, room temperature
2/3 c. superfine sugar (granulated works)
3 Tbsp. Fresh Key Lime Juice (reg. lime works)
2 Tbsp. zest fresh key lime (or reg. lime)
1/3 c. crushed graham crackers
Be sure cream cheese is at room temperature. Combine all
ingredients except graham cracker crumbs. Mix well, being sure
sugar is dissolved (superfine dissolves faster). Place in
refrigerator to chill 2 hours. Remove from refrigerator and
quickly roll into a firm ball, then roll the ball into Graham
cracker crumbs. Refrigerate until ready to use. Serve with Graham
crackers or shortbread cookies. Makes 32 1-oz. servings; divide
ingredients in half for 16 servings, but still use 1/3 c. crushed
