1 2/3 c. beef broth 3/4 c. julienned sun dried tomatoes, not in oil 1/4 c. butter 1 pkg. Stove Top Herb Stuffing 1 1/4 lb. skirt or round steak salt and pepper to taste Bring broth, tomatoes, and butter to boil on medium heat. Stir in stuffing mix. Cover, remove from heat for 5 minutes; fluff with fork. Lay steak flat and sprinkle with salt and pepper. Cover steak evenly with stuffing mixture. Roll lengthwise. Skewer with toothpicks. Place seam side down on foil lined cookie sheet. Roast at 425 for 40 minutes or until steak is done. Slice to serve; will look like a pinwheel. Good with mashed potatoes.
