6 medium potatoes, peeled & cut up
2 carrots, chopped
6 celery ribs, chopped
8 c. water
1 onion, chopped
6 Tbsp. butter, cubed
6 Tbsp. flour
1 tsp. salt
1/2 tsp. pepper
1 1/2 c. milk
Cook potatoes, carrots, and celery in water for 15-20 minutes.
Drain, saving liquid. In small pan, saute onion in butter, add
flour, salt and pepper. Gradually add milk. Bring to a boil, cook
2 more minutes until thick. Stir in vegetables and add a cup or
more of liquid.
