ITALIAN SAUSAGE SOUP

1/4 Tbsp. olive oil
1 lb. Italian sausage
1/2 c. onion, diced
2 cloves garlic, minced
pinch of red pepper flakes (opt.)
14 oz. can diced tomatoes
8 c. chicken broth
3/4 c. farfalle or any other small pasta
2 c. spinach, rough chopped

Heat oil in large pot over medium heat. Add sausage, onion, garlic,
and pepper flakes and cook until sausage is no longer pink. Add
tomatoes and broth to pot and bring to a low boil. Stir in pasta;
cook for 6 minutes, and then add spinach. Simmer for 5 minutes or
longer.
