3 cans black-eyed peas, drained and rinsed
1/4 c. fresh cilantro (opt.)
1 red or orange sweet pepper, chopped
1/2 c. red onion, chopped
1/2 c. red pepper jelly
1/2 c. wine vinegar
1/4 c. olive or canola oil
salt and pepper to taste
Add cilantro, pepper, and onion to peas. Mix jelly, vinegar, oil,
salt, and pepper. Add to pea mixture and toss. Chill 8 hours
