15 1/4-oz. can lima beans, rinsed and drained
15-oz. can butter beans, rinsed and drained
1 large sweet red pepper, chopped
1 medium green pepper, chopped,
1 large onion chopped
4 garlic cloves, minced
1/4 c. lemon juice
1/4 c. olive oil
2 Tbsp. cider vinegar
2 tsp. ground cumin
1/4 tsp. pepper
In a large bowl, combine the beans, peppers, onion, and garlic. In
a small bowl, combine remaining ingredients. Pour over bean
mixture and toss to coat. Chill until serving. Serves: 8
