1 stick butter 1/2 c. flour 1 c. milk 6 eggs 3 oz. cream cheese 2 c. cottage cheese 1 lb. Monterey Jack cheese 4 oz. can chopped green chilies 1 tsp. baking powder 1 tsp. salt 1 tsp. sugar Melt butter in small saucepan. Stir in flour and cook until smooth. Add milk, stir until smooth and let cool to room temperature. In a separate bowl, beat eggs with a fork. In large bowl, combine all the ingredients including eggs, and milk and butter mixture. Stir until mixture is well blended. Pour into a well-greased 9" x 13" pan. Bake uncovered at 350 for 45 minutes. Add meats, other cheeses or vegetables to make many different varieties of this moist and delicious casserole.
