1 1/2 lbs. mild pork sausage, cooked and drained 8-10 oz. loaf of French bread 2 4-oz. cans mushrooms, drained and chopped 5 large eggs 1 qt. milk 2 Tbsp. Italian seasoning 1/4 tsp. pepper 8 oz. pkg. (2 c.) shredded mozzarella cheese 8 oz. pkg. (2 c.) shredded cheddar cheese Grease 9 x 13 glass baking dish. Crumble sausage. Cut bread into 1/2" cubes. In baking dish, combine sausage, bread cubes, and mushrooms. In large bowl whisk eggs, milk, Italian seasoning, and pepper. Pour egg mixture over sausage mixture. Cover with plastic wrap and refrigerate overnight. About 1 3/4 hours before serving, preheat over to 350. Bake strata uncovered 30-40 minutes. Remove from oven and sprinkle evenly with mozzarella and cheddar cheeses. Bake 10 minutes longer until knife inserted in center comes out clean. Remove strata from oven and let set for 10 minutes.
