3 Tbsp. flour
2 Tbsp. margarine
2 c. milk
1 c. shredded cheddar cheese
1/4 c. chopped green onions
3 Tbsp. margarine
1 lb. bacon, crisp-fried, crumbled
4 oz. jar button mushrooms
salt and pepper to taste
Combine flour and 2 Tbsp. margarine in saucepan. Stir in milk.
Cook until thickened, stirring constantly. Add cheese, stirring
until melted. Sauté green onions in 3 Tbsp. margarine in skillet.
Scramble eggs. Add green onions, bacon, mushrooms, salt, and
pepper to cheese mixture; mix well. Add scrambled eggs gently to
mixture. Pour into buttered 9 x 12 casserole dish. Chill
overnight. Bake at 350 for 30 minutes. Serves: 8-10
