2 chicken breasts 1 box Fried Rice Rice-a-Roni 1 small can pineapple chunks (drained, reserving liquid) 1 small onion, chopped 1-2 cloves garlic 1 green pepper, chopped 1 small can of sliced water chestnuts (drained) 3/4 c. cashews Boil 2 chicken breasts until tender (reserve liquid). Prepare Fried Rice Rice-a-Roni according to package directions, but use reserved liquid from chicken and liquid drained from pineapple in place of the water called for. Add onion and garlic to the rice as you sauté it. While Rice-a-Roni is cooking, break up chicken into bite-sized pieces and add that to rice mixture. Add green pepper, pineapple chunks, and water chestnuts to rice when you have about 3 minutes left for rice to cook (I like the green pepper rather crispy, so use your own judgment).
