1 lb. ground chicken olive oil 1/4 c. Orinzo seasoning 1 red pepper, chopped 1 green pepper, chopped 1 medium yellow onion, chopped 2 tsp. minced garlic 2 tsp. lime juice 1 c. black beans, rinsed and drained 1 c, corn, drained Bag of Tostio's 2 c. shredded sharp cheddar cheese Cook ground chicken in olive oil in a frying pan until done. Add Orinzo seasoning to chicken; cook on low 5 minutes. Set aside. Saute peppers, onion, garlic, and lime juice in olive oil until soft. Combine with chicken, black beans and corn. Simmer 10 minutes. Layer chips in 9 x 13 pan. Add chicken mixture on top of chips. Add cheese. Put under broiler until cheese melts. This makes 2 9 x 13 dishes.
