1/2 cup olive oil
1 tsp. salt
1 tsp. black pepper
1 pkg. dry Ranch dressing
14 medium potatoes, cubed
2 1/2 c. shredded cheese
1 c. crumbled bacon
1 c. green onions
3 chicken breasts, cubed
Preheat oven to 500. Spray 9 x 12 glass (only) baking dish. In
large bowl, combine oil, salt, pepper, and dry Ranch dressing. Add
potatoes to mixture and toss. Spoon into baking dish. Roast about
1 hour, until crispy. Stir every 15 minutes. In separate bowl,
mix cheese, bacon, and onions. Lower oven temperature to 400, top
with cheese mixture and raw chicken. Bake 15-20 minutes.
