4 c. prepared brown rice
3 Tbsp. vegetable oil
1 white onion, chopped
2 cloves garlic, minced
1 c. frozen peas and carrots
2 eggs
1/2 lb. boneless, skinless chicken breasts (cut into cubes) OR
cooked shrimp (remove veins & peel)
1/4 c. soy sauce

Prepare rice according to package. Heat oil in skillet on medium
heat. Add onion, garlic, peas and carrots and fry until tender.
Crack eggs into the pan, stirring through vegetables. Add rice and
meat. Add soy sauce. Stir well and remove from heat. Serve.
