1 1/2 lb. lean ground beef 1 c. bread crumbs 1 c. milk 1/2 c. finely chopped onion 1 egg 1 tsp. salt 1/2 c. brown sugar 3/4 c. ketchup Combine beef, bread crumbs, milk, onion, egg, and salt, mixing well. Form into loaf and place on roasting pan on top of a rack so that loaf doesn't set in drippings while cooking. Bake at 350 for 45 minutes. Meanwhile, stir together the brown sugar and ketchup and set aside. Remove meatloaf from oven and spread with some of the ketchup mixture. Return to oven for 15 minutes or until meat is cooked thoroughly. Remove loaf from oven and allow to set about 5-10 minutes before cutting. Note: I put the remaining ketchup mixture in a dish on the table, as my family likes to use it for dipping. I can always count on my son and his family coming over for dinner when I have steak on the grill or this meatloaf. I serve with mashed potatoes and green peas.
