1 lb. ground beef
1 pkg. taco seasoning mix
6 flour tortillas
1 can cream of mushroom soup
10 oz. grated cheddar cheese
8 oz. sour cream
1 small can chopped green chilies
Brown beef; drain. Add taco season mix and simmer according to
directions. Divide meat into 6 portions. Place meat on flour
tortillas. Roll up and place in casserole dish. In saucepan, heat
soup, cheese, sour cream, and green chilies. Pour over enchiladas.
Sprinkle with more cheese if desired. Bake at 350 for 30 minutes.
You could also use ground chicken or turkey with cream of chicken
