4 lbs. pork ribs 1 Tbsp. paprika 1 1/2 tsp. packed brown sugar 1 1/2 tsp. finely grated orange zest 1 1/2 tsp. salt 3/4 tsp. ground cumin 1/2 tsp. black pepper 1/4 tsp. cayenne pepper olive oil Preheat oven to 250. Remove membrane from back of rack. Mix all other ingredients, except olive oil, in a bowl. Lightly oil ribs and rub dry mix on both sides of rack. Tightly enclose ribs in aluminum foil. Put onto baking sheet, meat side up, and place in oven for approximately 3 hours. When done, ribs should be falling off the bone. Heat grill and when heated, remove ribs from foil and carefully place, meat side down, over direct heat for 3-5 minutes. Remove from grill and let set undisturbed for 5 minutes, then serve with favorite BBQ sauce.
