2 c. squash, finely diced 1 c. onion, finely diced 1 egg, beaten salt and pepper to taste 1/2 c. + 1 Tbsp. flour cooking oil Mix squash, onions, egg, salt, and pepper. Add flour and mix. At medium heat, put 1/2" oil in skillet. Drop squash mixture by spoonfuls into hot oil. Cook 3-4 minutes on each side or until golden brown.
