POSH SQUASH CASSEROLE

2 lbs. yellow squash, thickly sliced
1 medium Vidalia onion
1/4 c. red bell pepper
2 eggs, beaten
1 c. mayonnaise
1 c. grated cheese
salt and pepper to taste
buttered bread crumbs

Boil squash and onion in small amount of water until tender. Drain
well and mix with remaining ingredients, topping with bread crumbs.
Bake at 350 for 30-40 minutes.
