1 c. Bisquick or other baking mix
1/2 c. shredded cheddar cheese
1/8 tsp. salt
2 eggs, beaten
1 c. shredded zucchini
2 Tbsp. chopped onion
1 Tbsp. butter
Combine Bisquick, cheese, salt, eggs, zucchini, and onion; stir
well. Melt butter in skillet. Spoon heaping tablespoons of
zucchini mixture into skillet. Fry 3-5 minutes per side until
golden brown. Drain on paper towel. Serves: 5-6
