2 10-oz. pkgs. frozen broccoli (may use fresh broccoli) 10 oz. can cream of mushroom soup 1/2 c. mayonnaise 2 eggs, beaten 1 c. sharp cheddar cheese, grated pepper to taste 4 Tbsp. onion, chopped 4 Tbsp. butter Ritz crackers, crushed for topping Cook broccoli for 5 minutes in boiling salted water; drain well. Combine soup, mayonnaise, eggs, cheese, pepper, and onions; mix well. Add broccoli and turn into buttered 2 qt. baking dish. Sprinkle with crushed Ritz crackers and dot with butter. Bake at 350 for 30 minutes or until it bubbles and browns.
