2 c. stewed tomatoes (I use 1 qt. home canned) 2 c. cut cooked corn 1 green pepper, diced 1 onion, sliced and chopped 2 Tbsp. sugar (or Sweet-N-Low) 2 Tbsp. butter 1/2 tsp. salt 1/4 tsp. pepper 1 c. bread crumbs (maybe more) 1/2 - 1 c. grated cheese Simmer tomatoes 5-10 minutes; add corn, pepper, onion, sugar, butter, salt, and pepper. Cook slowly 15-20 minutes. Place alternate layers of vegetables and bread crumbs. Sprinkle with cheese on top. Bake at 400 about 20 minutes or until cheese melts.
